Mini Key Lime Pies

Green is the color of the future. In “The Shape of Water“, Giles (Richard Jenkins) has quite a collection of the inedible Key Lime Pies at home in his refrigerator. He buys these pies every day trying to get the attention of Pie Guy (Morgan Kelly). Although we didn’t taste his pies, we are certain you will love this recipe for Mini Key Lime Pies as much as we do. By the way, the diner scenes were filmed at the Lakeview Restaurant in Toronto. We plan to stop by next year when we attend the Toronto Film Festival.

Mini Key Lime Pies

 2 tbsp Sugar
 1 cup Graham Cracker Crumbs
 3 tbsp Butter, melted
 3 cups Sweetened Condensed Milk
 ½ cup Sour Cream
 ¾ cup Key Lime Juice
 1 tbsp Lime Zest, grated
 Few drops of green food coloring

Use a mini cupcake pan.

Mix graham cracker crumbs, 2T sugar and butter completely. Press into the bottoms of paper lined cups.

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind. Mix well and pour into the prepped cupcake pan. Fill almost to the top.
Bake in preheated oven for 5 to 6 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill cupcakes thoroughly before serving. Garnish with lime slices and/or whipped cream.

Refrigerate until completely chilled. Remove papers before serving.
