Hungarian Noodles and Cabbage

The beginning of 1945 shows us the Town Clerk glad handing with the townspeople who are working hard to prepare for his son’s wedding.  He takes a break for lunch.  Not wanting to spoil his appetite for the wedding dinner he just asks for noodles – they looked pretty filling to me.   This would be a good side dish for a spicy entrée.

Hungarian Noodles and Cabbage - the GBY

 1 tbsp Salt
 4 cups Cabbage, finely shredded
 1 cup Onion, finely sliced
 4 tbsp Butter
 2 tsp Sugar
 ¼ tsp Pepper
 3 cups Egg Noodles, broad, cooked and drained

Mix the salt and cabbage together and let stand 30 minutes. Squeeze out as much liquid as possible.

Heat the butter in a deep skillet. Add the onions, cabbage, sugar and pepper. Cook over low heat, stirring frequently, until cabbage is browned, about 45 minutes. Add the noodles and toss to blend thoroughly.
