Free Solo – Climbers Casserole

We watched Alex Honnold make this dish in a skillet and eat it with a spatula.  In Free Solo, you get the feeling he is more of an eat to live kind of guy.   He spent time at the beginning of his career living on 88 cents a day.  You can add spices (Tony Chachere’s) to give it a little zip.  It’s easy and will feed a crowd of boys, or maybe on 3 – 4 depending on your boys!

Climbing Casserole - The GBY

Yields6 Servings

 1 Russet Potato, large
 2 Vegetarian Chili, cans
 8 oz Cheese, shredded
 12 Eggs, extra large, beaten

Spray a cast iron skillet with Olive Oil Pam. Using a mandolin, slice the potato and layer evenly over the bottom of the pan. Sprinkle the onion over the potatoes. Place in oven 300 degrees for 20 minutes. Remove pan from oven. Increase heat to 350 degrees. Spread chili over potatoes, cover with shredded cheese and top eggs. Season with salt & pepper.

Return to oven for 30 minutes, until eggs are cooked. Serve with salsa.
