Blackkklansman – Steubie Snacks

In Blackkklansman, Ron Stallworth is a police officer in Colorado.  When searching for a recipe to pair with this movie we focused on the state of Colorado for lack of any other use of food in the movie.  We found this delectable treat that hails from Steuben’s in Denver.  The little nuggets of braised pork shoulder are deep fried until crispy and then topped with powdered sugar.  We decided that this fit our bill as being both a savory and a sweet item for our 2019 Academy Awards Party menu.

Yields1 Serving

 2 Pork Shoulder Steaks, 3/4"-1" thick
 4 Garlic cloves
 1 tsp Peppercorns
 1 cup Chicken Broth
 1 cup White Wine
 ½ cup Powdered Sugar
 Cooking Oil

Preheat oven to 350 degrees.

Dice pork into 3/4"-1" cubes. Place diced pork in a baking dish. Put garlic and peppercorns in a sachet bag and add to the baking pan. Add salt, chicken broth and white wine to the baking pan. Cover the pan with foil.

Cook at 350 degrees for 2 hours.

Strain pork in a colander. Put pork in the refrigerator until cooled.

Heat 3" of cooking oil to 375 degrees.

Fry pork in batches until brown and crispy on the edges.

Place cooked pork on a paper towel to absorb the excess oil.

Dust pork with powdered sugar.
