Yugoslavian Christmas Cookies – Last Christmas

Both George Michael’s music and Kate’s Yugoslavian family play significant roles in Last Christmas.   We found this recipe for Christmas cookies that would make a delicious addition to your holiday table.

Yugoslavian Christmas Cookies - The GBY

 ½ lb Butter, unsalted at room temperature
 1 ½ cups Sugar
 1 Egg Yolk
 ½ tsp Salt
 2 ½ cups Flour
 4 Egg Whites, large
 ¾ cup Walnuts, ground
 1 tsp Lemon Extract
 1 cup Blackberry Jelly
 ¼ cup Walnuts, chopped

Preheat oven to 350 degrees.

Cream butter and 1/2 cup sugar together thoroughly; add egg yolk and salt and combine. Add flour and combine. Pat mixture into a 9x13 inch pan.

Beat egg whites until stiff. Gradually add 1 cup sugar. Continue to beat until you reach a meringue consistency. Gently fold in ground walnuts and lemon extract.

Spread jelly over dough mixture in pan.

Swirl meringue over jelly. Sprinkle with chopped walnuts.

Bake for about 40 minutes. To cut, use a serrated knife.
