Preheat the over to 350. Grease a medium casserole dish with cooking spray.
Cook the lasagna noodles according to the package directions.
In a medium bowl, combine the ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, parsley. Mix well then season with salt and pepper.
Drain the lasagna noodles and place them flat on wax paper. Try to dry them as much as you can. Cut lasagna noodles in half crosswise. Spread a thin layer of the ricotta mixture on each noodle and roll them up. After they are rolled, cut each on in half crosswise.
Spoon a little of the marinara sauce on the bottom of the prepared baking dish. Arrange the lasagna rolls in the pan and spoon marinara sauce over each roll. Sprinkle with the remaining mozzarella cheese.
Bake until the cheese is melted, 15-20 minutes.
