Mini Crustless Egg Bites

 12 Eggs, jumbo
 ¾ cup Milk
 Salt
 Pepper
 8 oz Spinach, fresh, chopped
 8.50 oz Sundried Tomatoes
 4 oz Tomato Basil Feta Cheese

Preheat oven to 375 degrees F

Spray a mini cupcake pan with PAM Baking spray.

Whisk together eggs & milk. Add salt & pepper. Add spinach. Fill the tins ¾ full. Place 1 sundried tomato in each bite. Top with Feta cheese.

Cook for 8 – 10 minutes. Cool for 10 minutes and remove bites from tin.

You can add mushrooms, tomatoes, sausage, bacon, whatever you want. This seems to be universally popular and good for the vegetarians.
