Mini Key Lime Cheesecakes

 2 cups Graham Cracker Crumbs
 4 tbsp Butter, melted
 2 tbsp Sugar
 24 oz Cream Cheese, room temperature
 1 cup Sugar
  cup Sour Cream
 ¼ cup Flour
 2 tsp Vanilla Extract
 3 Eggs, room temperature
  cup Key Lime Juice

Heat oven to 350 degrees. Line mini muffin cups with liners. Makes a 48.

Combine graham cracker crumbs, butter and sugar together. Put about 1 teaspoon of crumbs into the bottom of the muffins tins. Press down. Bake for 2 minutes. Set aside.

Cream together cream cheese and sugar for a couple minutes until very smooth, scrape down the sides of the bowl as necessary. Add sour cream, key lime juice, and vanilla. Mix well. Add 1 egg at a time, beating for about 1 minute after each addition. Stir in flour.

Scoop batter into muffin cups. Return to the oven and bake for 10 minutes, until set.

Cool completely before serving.
