Roasted Shrimp Cocktail Bites

 15 Athens Mini Fillo Shells, 1 package
 15 Shrimp, raw, no tails, deveined, 60-75 count size
 2 tbsp Olive Oil
 4 oz Philadelphia Cream cheese, room temperature
 2 tbsp Heavy Cream
 2 tbsp Fresh Dill, chopped

Preheat oven to 400 degrees.

Place the shrimp on a cookie sheet with parchment paper. Pat dry. Drizzle olive oil over shrimp. Sprinkle with salt and fresh ground pepper. Place in oven for 12 minutes. They are ready when they are pink and opaque.

Mix cream cheese, heavy cream and dill using a hand mixer. The mixture should be lighter than just cream cheese alone. Using a bakers decorating tool, pipe the mixture into the Fillo Shells. Place a cooked shrimp on each one. You can top with a dollop of cocktail sauce.
